Basic Pizza Dough

3 1/2 cups flour

1 cup warm water (between 95° and 115° F.)

2 T yeast (2 tablespoons, I like my dough a little yeasty. You can use less)

2 T honey

1/4 cup olive oil

1/2 tsp. salt

Put in bread machine on dough setting and walk away until done. Then roll out the dough as desired. The dough can be frozen as well.

Pastor Pork Tacos

Pork Mixture

INGREDIENTS

  • 1 pound pork, ground (better if you grind your own from pork loin)
  • 1 large yellow onion, sliced
  • 3 tablespoons chili powder
  • 3 large cloves garlic, minced
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Optional garnishes: diced tomatoes, chopped cilantro, shredded cheese, shallot & pineapple salsa

DIRECTIONS

  1. Heat salt in a large non-stick skillet over high heat.
  2. Add ground pork, onion, chili powder, garlic, and pepper. Cook and stir 8 minutes.
  3. Add rice vinegar and 1/4 cup water. Cook and stir 10 minutes.
  4. Wrap ground pork in tortillas. Serve with garnishes, as desired.

 

Shallot & Pineapple Salsa

INGREDIENTS


 

1 pineapple, finely chopped

1 ripe avocado, diced

3 tbsp cilantro, finely chopped

1 jalepeno pepper, finely chopped (seeded if you want it not too hot)

2 medium shallots, finely chopped

1 lemon

Salt

Pepper

DIRECTIONS

Combine all ingredients to taste. To be a little fancy serve it in the hollowed out half pineapple (cut from top to bottom down the middle)
